Skagen Toast with Shrimp

This toast with shrimp salad and mayonnaise, named after not even a Swedish but a Danish port, was invented by restaurateur Ture Wretman. In the post-war decades, when foreign fast food threatened local culinary traditions , he acted as their guardian. And now "Skagen" is available in almost every restaurant in Sweden - both expensive and not so.

Cut off the crust of the bread and fry the resulting slices on both sides in a small amount of oil until golden brown, then transfer to paper towels.
- Toast bread: 4 pieces
- Butter: 10 g

Set aside a few shrimp and four sprigs of dill for decoration. If the shrimp are large, cut them into small pieces. Finely chop the remaining dill and mix it with the shrimp, mayonnaise, and mustard.
- Peeled boiled shrimps: 320 g
- Dill: 50 g
- Mayonnaise: 50 g
- Dijon mustard: 1 tablespoon

Spread the mixture on toasted slices of bread. Top each toast with a few shrimp and a spoonful of caviar. Garnish with a sprig of dill and a slice of lemon.

- Red caviar: 150 g
- Dill: 50 g
- Lemon: 1 piece
