In this recipe, fried eggplants are soaked in a fragrant mixture of sweet pepper, garlic, hot chili, parsley, and apple vinegar, creating a vibrant balance of flavors. The heat of the chili adds spiciness while the vinegar provides a light tang. The dish can be served immediately or after cooling, making it ideal for both everyday dinners and festive gatherings.

Slice the eggplants thickly lengthwise and fry on both sides, seasoning with salt, in a large amount of vegetable oil until browned.
- Eggplants: 400 g
- Salt: to taste
- Olive oil: 100 ml

Remove seeds from the peppers, chop them randomly, and place them in a blender. Add garlic, parsley leaves, vinegar, and olive oil, and blend.
- Sweet pepper: 300 g
- Chili pepper: 50 g
- Garlic: 4 cloves
- Parsley: 50 g
- Apple cider vinegar: 50 ml
- Olive oil: 100 ml

Arrange the eggplants in a single layer on a plate, brush each piece with marinade, add a new layer of eggplants on top, brush again and repeat the process until the eggplants are finished. They can be served immediately or after cooling.
