Spanish Tomato Toast

Spanish tomato toasts are a simple yet sophisticated dish deeply rooted in Spanish culinary traditions. They resemble the famous Pan con Tomate, popular in Catalonia. The secret of the flavor lies in the combination of juicy, ripe tomatoes with aromatic garlic and crispy bread grilled to a golden crust. Tomato puree adds freshness and a slight tanginess to the toasts, while drops of olive oil and sea salt enhance the taste. These toasts are perfect as an appetizer, light breakfast, or accompaniment to main dishes. They can be served with jamón, Manchego cheese, or even anchovies for a richer flavor. Spaniards love to enjoy them in cozy bars accompanied by a glass of wine or a cup of aromatic coffee.

1
Cut the tomatoes in half horizontally. Place a grater in a large bowl. Grate the tomatoes on a coarse grater while holding half of the tomato in your palm. This way, the pulp will end up in the bowl, and you'll have the skin left in your hand. Discard the skin. Add salt to the tomato puree.
