Boil the potatoes in salted boiling water for 5-8 minutes until soft. Drain the water and set aside.
- Potato: 450 g

Heat oil in a pan over medium heat. Add onion and sauté for 15-20 minutes until soft and translucent. Add garlic and cook for another 1-2 minutes.
- Olive oil: 1 tablespoon
- Onion: 2 heads
- Finely chopped garlic: 3 cloves

At the same time, mix corn flour with 2 cups of cold water in a small container. Pour the resulting liquid into the onion, reduce the heat, and let it simmer for 5 minutes, stirring occasionally. Add the yeast and salt, and let it simmer for another 5 minutes, stirring occasionally.
- Corn flour: 2 tablespoons
- Dry yeast: 2 tablespoons
- Salt: 1.5 teaspoon

Remove from heat, add potatoes and 1/2 cup of wine. Blend until smooth with an immersion blender. Place on heat and let simmer for 5 minutes on low.
- Potato: 450 g
- Dry white wine: 1 glass

Add the remaining 1/2 cup of wine, boil for 1 minute until thickened, stirring constantly. Pour into a fondue pot, sprinkle with nutmeg, and serve with bread and apples.
