Preheat the oven to 200 degrees. Line a baking tray with foil and lay the bacon slices in a single layer. Bake for about 1 minute until the bacon is crispy. Place the cooked bacon on a paper towel.

We are preparing the sauce. In a tall container for an immersion blender, mix the egg yolk, water, lime sauce, and a pinch of salt. In a small saucepan, melt the butter over high heat. When the butter stops foaming, pour it into a measuring cup.

Start blending the ingredients in a container with an immersion blender, gradually pouring in hot oil. It should form a homogeneous mass. Add half of the jalapeño pepper to the mixture (more or less depending on your preference). The remaining pepper will be used for serving the burgers. Keep the sauce in a warm place.
