Onion pancakes are a crispy, aromatic dish that comes from American cuisine but has roots in Asian gastronomy. Thin pancakes soaked in sesame oil acquire an amazing flavor thanks to the sweet tenderness of leeks. Pour flour into the bowl of a food processor. Turn on the processor and gradually add 3/4 cup of hot water. If the dough is too thick, gradually add the remaining hot water. Remove the dough and form a ball. Place it in a bowl, cover with a damp towel, and let it rest for 30 minutes at room temperature (or overnight in the refrigerator).
- Wheat flour: 2 glasss
- Boiling water: 1 glass

Divide the dough into 4 equal pieces and roll each into a small ball. Roll each ball into a pancake about 20 cm in diameter. Brush one side of the pancake with sesame oil. Roll the pancake into a spiral and make a 'snail'. Press down with your hand and roll it out again into a pancake with a diameter of 20 cm.

Again, grease the pancake with sesame oil. Place 1/2 cup of leeks and roll it up again, then make a 'snail', press it with your hand, and roll it out into a pancake about 17 cm in diameter. Repeat the procedure with the remaining 3 pancakes.

Mix all the ingredients for the sauce. The sauce is ready.
- Soy sauce: 2 tablespoons
- Wine vinegar: 2 tablespoons
- Ground ginger: 0.5 teaspoon
- Sugar: 2 teaspoons

Heat the pan and oil over medium heat and place the pancake in the oil. Fry for about 2 minutes until golden on one side. Carefully flip the pancake and fry the other side. Place the finished pancake on a paper towel. Salt it, cut into 6 pieces. Serve hot with sauce. Dip the pancake pieces in the sauce. Enjoy your meal!
