Pour milk into a large wide pot (you need space to whip the mixture well later), then add butter, salt the mixture, and add nutmeg.

When the milk reaches boiling point, gradually add semolina to the pot while constantly stirring the mixture.
- Semolina: 250 g

Continue whisking until the mixture thickens and large bursting bubbles appear on the surface. This will take 3-5 minutes.

Remove the pot from the heat, add grated cheese, whisk, check for salt and pepper. Transfer the mixture to a bowl, sprinkle with nutmeg and serve.
