Bald Tomatoes

"No need for presents, make lots of bald ones," says Olga's friend, restaurateur Mitya Borisov, about these tomatoes before his birthday. Guests usually fight for the remaining sauce: Pavel Semenovich Lungin, for example, likes to wash down his last shot with it.

Place the tomatoes in a deep container and pour boiling water over them. After one and a half to two minutes, when the skin starts to crack, drain the boiling water and rinse the tomatoes with cold water. Peel them.
- Cherry tomatoes: 500 g

Transfer the tomatoes to a bowl or container with a tight-fitting lid. Pour in vinegar and olive oil. Add oregano, minced garlic, and salt. Close the lid and mix by shaking the container vigorously.
- Balsamic vinegar: 1 tablespoon
- Extra virgin olive oil: 2 tablespoons
- Oregano: 1 tablespoon
- Garlic: 4 cloves
- Salt: to taste

Leave for one to one and a half hours at room temperature, shaking occasionally. Chill before serving.
