Pancakes with green onions and cilantro

Pancakes with green onions and cilantro are a great option for a snack. This is the case when the greenery is especially brightly revealed during heat treatment. Adding cilantro to the pancake dough gives it a specific taste, and green onions will be a great addition.

Mix soy sauce, vinegar, and sesame oil (almost all — except for a couple of drops), then add the pre-roasted sesame seeds. Set the resulting sauce aside for a while.
- Soy sauce: 70 ml
- Rice vinegar: 2 tablespoons
- Sesame oil: 0.5 teaspoon
- Sesame seeds: 1 teaspoon

Chop all the greens with a sharp knife. In a large bowl, mix both flours, salt, egg, yolk, a glass of water, as well as the previously deseeded and chopped chili, black pepper, and the remaining sesame oil.
- Green onions: 20 g
- Coriander: 20 g
- Wheat flour: 120 g
- Rice flour: 40 g
- Salt: 0.5 teaspoon
- Chicken egg: 1 piece
- Egg yolk: 1 piece
- Green chili pepper: 1 piece
- Ground black pepper: pinch
- Sesame oil: 0.5 teaspoon

Heat the pan over medium heat and pour in some vegetable oil. Pour a third of the batter using a ladle and let it spread across the surface, then immediately sprinkle evenly with herbs (one-third of the volume).
- Vegetable oil: 1 tablespoon
- Green onions: 20 g
- Coriander: 20 g

Fry the pancake for two minutes until the edges are set, then carefully flip it with a spatula and fry for another minute. Fry two more pancakes from the remaining batter in the same way.

Transfer them to paper towels and let cool slightly, then cut each into eight pieces with a sharp knife and arrange on serving plates. Serve with sauce.
