Cheese Puff Sticks

Cheesy puff sticks are a true delight for lovers of Italian cuisine. Crispy, airy, and aromatic, they combine the tenderness of puff pastry with the rich flavor of parmesan. Their origin is rooted in Italian baking traditions where cheese snacks have always held a special place. Perfect as an accompaniment to an aperitif or a light snack with wine, they make a wonderful centerpiece for any table. The preparation is simple: roll out the puff pastry, brush it with egg yolk, generously sprinkle with parmesan, twist into strands and bake until golden brown. The final touch is sesame seeds that add a unique texture and nutty aroma. These sticks are not just a treat but a small gastronomic art that unites taste, aesthetics, and the Italian passion for food.

1
Roll out the dough (yeast or non-yeast - it doesn't matter) into a rectangle.
- Puff pastry: 0.4 kg
2
Mix the egg yolk with a small amount of water (literally a couple of drops).
- Egg yolk: 1 piece
- Water: to taste
3
Brush the rectangle with egg yolk.
- Egg yolk: 1 piece
4
Visually divide the dough into 2 parts. On one, place grated parmesan (put as much as you like, I add a lot).
- Grated Parmesan cheese: 0.23 kg
5
Cover with the other half on top. Press slightly with your fingers.
6
Cut a vertical strip 1–1.5 cm wide. Twist the strip into a cord.
7
Place the strips on a baking sheet lined with parchment paper.
8
Brush the top of the strips with egg yolk again. Sprinkle sesame on top.
- Egg yolk: 1 piece
- Sesame: to taste
9
Send the strips to a preheated oven at 200 degrees.
10
Bake for 15 minutes in regular mode and another 3-4 in convection mode (to brown).
