Mix 2.5 cups of flour with 1 cup of water until the dough is lump-free. Knead the dough until it becomes even smoother and more elastic. Coat this ball of dough with oil and place it back in the bowl. Cover the bowl with a damp cloth and let the dough rest for 30 minutes. Divide the dough into 4 equal parts. Grease the back of a large metal baking sheet with oil. Roll out one piece of dough on the greased side of the sheet until it forms a thin triangle about 30x22 cm.

Chop a bunch of green onions and keep it handy with salt.

Lightly grease the dough surface with oil and then sprinkle with onion and salt.

Starting from the long end, tightly roll the dough to form one long tube.

Cut the straw into 2 equal parts.

Take one of these halves and twist it into a knot.

Roll out the dough into a flat round pancake.

Heat oil in a pan and carefully fry the pancake. It should sizzle a bit (watch to avoid burning). Cook for about 2 minutes on each side, or until the pancake turns golden.
