Whole grain bread is a true embodiment of simplicity and health benefits. The history of whole grain bread dates back to ancient times when flour was ground by hand, preserving all its nutrients. In Italian cuisine, it holds a special place as the base for many traditional dishes. Its flavor is rich with a slight nutty note, and its texture is dense and aromatic. With flaxseeds and olive oil, it acquires subtle earthy aromas and a crispy crust. This bread pairs excellently with soups and cheeses or can be enjoyed on its own with a drizzle of olive oil. It is nutritious and high in fiber, making it an ideal choice for healthy eating.

1
Dissolve the yeast in warm water (35–37 degrees), add sugar, salt, olive oil, and mix.
- Dry yeast: 1.5 teaspoon
- Water: 250 ml
- Sugar: 2 tablespoons
- Salt: 1 teaspoon
- Olive oil: 1 tablespoon
2
Add flour and spices (seeds) to the mixture, and start kneading well until it becomes firm enough to knead by hand.
- Whole grain flour: 370 g
- Wheat flour: 150 g
- Flax seeds: to taste
3
Grease the dough with oil, cover it, and place it in a warm place for 30 minutes. During this time, the dough should increase 2-3 times.
- Olive oil: 1 tablespoon
4
Preheat the oven to 180 degrees. Place the dough on a baking sheet lined with parchment (the dough can be divided into two pieces).
5
Place a dish with water at the bottom of the preheated oven (we need steam). Bake in the middle of the oven for 15 minutes, then remove the dish with water, dip the partially baked bread in salted water (for crust) and bake for another 15-20 minutes.
- Water: 250 ml
- Salt: 1 teaspoon
6
Take out the bread, cover it with a towel, 10-15 minutes will be enough. Then it can be served.
