Mackerel is one of those rare fish that has so much flavor that it's more than enough. Therefore, for the fish itself, in principle, nothing but salt and sugar is needed. The other ingredients stated in the recipe help the onions and potatoes acquire character .

For the fish — take 4 fillets weighing about 250 grams each — rub with a mixture of sugar and salt, place in a bowl, cover with plastic wrap, and leave in the fridge for a day.
- Mackerel fillet: 1 kg
- Salt: 100 g
- Sugar: 50 g

Boil the potatoes. Important point: salt the water considering that the fish will also be quite salty. After the water boils, cook the potatoes for about 15 more minutes, until done.
- New potatoes: 800 g
- Salt: 100 g

Mix wine vinegar and lemon juice. Slice the onion into thin half-rings and let it marinate in this mixture until serving.
- Wine vinegar: 4 tablespoons
- Lemon juice: 4 tablespoons

Drain the water from the pot with potatoes and immediately add butter, mixing gently.

Cut the fish into slices about 2 cm thick, place on a plate with onions and potatoes, garnish with dill and serve.
