Vegetarian kebab with yogurt sauce is a vibrant combination of fresh vegetables and fruits soaked in a fragrant marinade that gives them a rich flavor. Mix the marinade ingredients in a small bowl: oil, vinegar, mustard, lemon juice, garlic, honey, salt, pepper, and chopped mint. Set aside.

- Balsamic vinegar: 1 teaspoon

- Ground dried garlic: to taste
- Transparent honey: 1 tablespoon
- Salt: to taste
- Ground black pepper: to taste
- Fresh mint: 2 tablespoons

Wash the vegetables thoroughly. Cut the zucchini into large pieces, the pepper into pieces the size of 2 coins, the tomatoes into 4 wedges, and the nectarines into 6 slices.
- Zucchini: 1 piece
- Sweet pepper: 1 piece

- Nectarines: 3 pieces

Place the chopped vegetables in a large bowl, pour the marinade over them, and gently mix with your hands. Preheat the oven to 200 degrees in grill mode.

Place a grill rack on the baking sheet, alternating as desired, skewer pieces of vegetables and fruits and arrange them on the rack. Drizzle with remaining marinade and place in the oven for 30 minutes. After 30 minutes, carefully open the oven, turn the kebabs over and move them to the top level of the oven. Grill for another 10 minutes, watching closely to prevent burning.
