Spicy lightly salted cucumbers with vodka are a bold and spicy take on the classic Russian appetizer, featuring a vibrant flavor and aromatic scent. This recipe draws inspiration from ancient pickling traditions where strong drinks were used to enhance taste and aroma. Vodka not only gives the cucumbers a unique texture but also helps reveal the richness of spices like cumin, anise, and allspice. The cucumbers turn out crispy with a subtle garlic hint and pleasant heat from chili. They make an ideal snack for meat dishes or as a standalone treat for true gourmets. After absorbing all the flavors for a day, the cucumbers become irresistible, especially when paired with rye bread and a chilled drink.

Pour salt into the water, mix, and bring to a boil.
- Water: 3.5 l
- Salt: 7 tablespoons

Cucumbers and all greens should be washed well.

Spread one bunch of brine at the bottom of the brining container (I have a steel pot).

Add half of all the spices. Cut one red pepper from several sides and place it at the bottom.
- Red chili pepper: 2 pieces
- Black peppercorns: 1 teaspoon
- Allspice peas: 1 teaspoon
- Anise (star anise): 4 pieces
- Caraway seeds: 0.5 teaspoon

Place cucumbers one by one at the bottom and then in layers. Alternating layers with peeled garlic and dill.
- Cucumbers: 2.5 kg
- Dill: 1 g
- Garlic: 1 g

Once all the cucumbers are packed, add all the remaining spices and place the sliced pepper.
- Black peppercorns: 1 teaspoon
- Allspice peas: 1 teaspoon
- Anise (star anise): 4 pieces
- Caraway seeds: 0.5 teaspoon
- Red chili pepper: 2 pieces

Pour half of the vodka.
- Vodka: 250 ml

Cover everything with the second bunch of brine (horseradish leaves on top).

Pour vodka into the boiling brine, mix, and pour it over the cucumbers.

Close the container with a lid, let it cool for about 5-6 hours, then place the container in the refrigerator.
