Cut the sea urchins around the 'navel' (the hole on the belly) with scissors.

Remove the roe (orange contents) and rinse well under running water until completely free of membranes and skin fragments.
- Sea urchin caviar: to taste

Sift and drain the water.

Place the clean caviar in a small deep bowl. Add grated ginger, chili pepper, finely chopped cilantro, soy sauce, juice of two limes, and a few drops of sesame oil. Mix gently and thoroughly and refrigerate for 15 minutes.

- Fresh cilantro (coriander): to taste
- Soy sauce: 2 tablespoons
- Lime juice: 2 pieces
