Chicken fillet rolls in bacon with feta cheese and tomatoes

Chicken fillet rolls in bacon with feta cheese and tomatoes are an exquisite dish of Greek cuisine, embodying a harmony of flavors and textures. Tender chicken fillet infused with aromatic spices pairs with the tangy saltiness of feta and the sweet juiciness of tomatoes. The bacon wrapping the rolls adds a crispy crust and rich meaty flavor. Baked to perfection, they become soft inside but have an appetizing golden crust outside. This dish is perfect for a festive table or a cozy dinner, especially when paired with garlic sauce with dill. Greek traditions of love for fresh and natural products make these rolls a true gastronomic delight.

1
Cut each fillet in half lengthwise to make slices, and lightly pound them.
- Chicken fillet: 3 pieces
2
Salt, pepper, coat with garlic and spices. Let it sit at room temperature for about 30 minutes.
- Mix of peppers: to taste
- Garlic: 3 cloves
- Poultry Spice Mix: to taste
3
Preheat the oven to 200 degrees.
4
Cut the cheese into sticks, about the width of the fillet, and do the same with the tomato.
- Feta cheese: 100 g
- Tomatoes: 1 piece
5
Place a slice of cheese and tomato on each fillet (on the wide side) and roll tightly into a roulade. Wrap each roulade tightly with 2 slices of bacon. Place the roulades in a baking dish (no oil needed) and bake for 20-30 minutes. Serve hot with your favorite sauce (I had garlic with dill).
