Paleo guacamole is a simple yet surprisingly delicious variation of the classic Mexican dish adapted to paleo diet principles. The recipe's base is the tender flesh of ripe avocado with a creamy texture and rich nutty flavor. Lime adds a pleasant refreshing acidity, while shallots give a slight spiciness softened by marinating in citrus juice. A pinch of sea salt and freshly ground black pepper subtly enhance the natural flavors of the ingredients. Guacamole pairs perfectly with vegetable slices, serves as a sauce for meat dishes, or simply spreads on crispy paleo crackers. It's an excellent solution for a light, nutritious snack that delights the taste buds while supporting healthy eating principles.

So, first we will soak the onion in lime juice. Peel the onion, chop it finely, place it in a small container and squeeze the juice of one lime over it. The onion should sit like this for about 10 minutes to lose its natural bitterness and absorb the aromatic citrus tang.

Meanwhile, let's prepare the avocado. Cut the ripe avocado in half (lengthwise). Now it's easy to remove the pit. Carefully lift the edge of the skin. The skin of a ripe avocado should come off easily from the flesh, so you can expose half of the avocado with a single hand movement.

Take half of each avocado and place it in a bowl suitable for softening. You can mash the avocado with a fork until it becomes puree-like. If small chunks remain, that's even better.
