We chop the cabbage as desired (originally in large pieces). We chop the raw beetroot, grate the carrot on a coarse grater, and finely chop the chili pepper and garlic. We mix everything together. We add a few peppercorns. We pack the mixture tightly into a jar and pour in the brine.
- White cabbage: 1 piece

- Carrot: 1 piece
- Garlic: 1 head

- Water: 1 l
- Coarse salt: 2 tablespoons
- Sugar: 0.5 glass

For the brine, pour water, add salt and sugar, bring to a boil. Turn off. Add vinegar.

We close the jar with a lid and leave it at room temperature. The cabbage is ready in a day. We store it in the refrigerator.
