While the butter melts, grate the cheese.

Mix cheese, flour, butter, cream, and baking powder (soda works too). Knead the dough until pliable.

After that, roll out the dough on a floured surface with a floured rolling pin and cut out circles/diamonds or other shapes to your liking with a glass or cutter. Ideally: cookies should be about 1 cm thick and about 6 cm in diameter.

Place the cookies on a baking sheet lined with parchment paper, brush the top with olive oil, decorate with spices, and put in a preheated oven at 180 degrees. Baking time: 20 minutes until the cookies turn golden.
