Frozen Spinach Pkhali

Pkhali made from frozen spinach is a bright and aromatic dish of Georgian cuisine that embodies the richness of flavors and traditions of the Caucasus. This delicate vegetable treat combines juicy spinach with crunchy walnuts, fragrant herbs, and spicy notes of adjika and wine vinegar. Chili pepper adds a slight spiciness, while garlic enhances the depth of flavor. Pkhali not only decorates the table but also serves as an excellent snack rich in nutrients. In Georgia, such dishes are traditionally served at feasts in the form of small balls often garnished with pomegranate seeds, giving them a festive appearance. Dip spinach in boiling salted water for 3-4 minutes. Drain in a sieve, rinse with cold water until completely cooled. Let it drain and squeeze. If the spinach is not chopped, finely chop it.
- Frozen spinach: 2 kg

Chop parsley, basil, green onion, and cilantro finely.
- Coriander leaves: 1 bunch
- Green basil: 1 bunch
- Green onions: 6 stems
- Parsley: 1 bunch

Crush the garlic with a knife and chop it finely.
- Garlic: 5 clove

Chop the walnuts in a food processor or, if you don't have one, place the nuts in a plastic bag and roll with a rolling pin.
- Walnuts: 200 g

Cut the chili pepper in half, remove the seeds, and chop finely.
- Chili pepper: 1 piece

In a deep dish, combine all the ingredients. Dress with wine vinegar and adjika. Add salt to taste.
- Wine vinegar: 1 teaspoon
- Megrelian adjika: 0.5 teaspoon
