Baked sweet pepper is a simple yet exquisite dish of European cuisine filled with natural sweetness and the aroma of fresh herbs. Its origins trace back to the Mediterranean, where baked vegetables are an important part of gastronomic culture. Peppers roasted in the oven to a slight smokiness acquire a tender texture and rich flavor. They are complemented by spicy garlic, refreshing lemon juice, apple cider vinegar, and aromatic herbs, creating a harmony of sweetness, acidity, and umami. This dish can be served as an appetizer or side dish; it pairs wonderfully with meat and fish dishes as well as crispy bread. After resting, it reveals even deeper flavor nuances, making it an ideal addition to a cozy dinner or festive table.

Wash and dry the peppers, place them on a baking sheet with the stems, drizzle with a little olive oil, and put them in a preheated oven at 180 degrees. Bake until slightly charred for 40-50 minutes. Remove from the oven and let cool slightly.
