Zucchini caviar is a classic Russian dish that is easy to prepare but incredibly tasty. Its history dates back to Soviet times when zucchinis were an accessible and popular ingredient. The delicate texture of the caviar enriched with the aroma of fried onions, tomato paste, and spicy notes of red pepper makes it versatile: it pairs well with bread and can be used as a side dish or a standalone snack. The long simmering on low heat harmoniously blends the flavors, creating a rich and balanced taste. Adding mayonnaise gives the caviar a velvety consistency. Packaged in jars, it stores well and remains delicious and appetizing even after months.

Peel the zucchini, grate it on a coarse grater, add onion fried in vegetable oil, and mix with mayonnaise.
- Zucchini: 6 kg
- Onion: 1 kg
- Mayonnaise: 0.5 kg

Mix everything well and cook on low heat for 2 hours.

Add tomato paste and sugar. Salt and add red pepper flakes to taste. Mix everything well and cook for 30 minutes.

Pour hot into jars, seal the jars, turn them upside down, and place them in a warm spot.
