Cut the dark green leaves and roots of the leek. Slice the remaining parts lengthwise into 4 pieces, then crosswise into 5 cm pieces.

Heat the wok over high heat.

In a bowl, mix the mushrooms with 1 tablespoon of olive oil, season with salt and pepper. Transfer to a wok and sauté until soft for about 10 minutes. Transfer to a plate.
- Champignons: 700 g
- Extra virgin olive oil: 2 tablespoons
- Coarse salt: to taste
- Freshly ground black pepper: to taste

In a bowl, mix the leek with the remaining butter, season with salt and pepper. Place in a wok and fry until golden for 15-20 minutes. Add the mushrooms 5 minutes before it's done.
