Spicy Potatoes

Spicy potatoes are a refined European dish that combines the tenderness of young potatoes with rich aromas of garlic, orange zest, and butter. This cooking method—first boiling and then baking—achieves the perfect balance between softness inside and a crispy golden crust outside. The dish has a bright, slightly citrus flavor with warm spicy notes from black pepper and dried parsley. Boil washed potatoes in salted water until cooked, about 20 minutes (depending on size).
- New potatoes: 500 g
- Salt: to taste

Grate the zest of one orange and mix it with 75 grams of butter, ground black pepper, and grated garlic. Add 1 teaspoon of dried parsley and mix everything well again. Leave it while the potatoes are cooking.

Meanwhile, preheat the oven to 220 degrees. Once the potatoes are ready, drain the water and let them sit for about 5 minutes. Line a baking sheet with parchment paper, transfer the potatoes there, and gently press them down (you can make cuts along and across with a knife). Be careful not to deform the bottom of the potatoes. Top with our aromatic mixture, season with salt, and bake in the oven for 20-25 minutes until crispy and golden brown!
