Heat oil in a pan over high heat. Add thinly sliced zucchini and onion cut into half rings. Flatten and fry, stirring, for about 2 minutes until golden.
- Grape seed oil: 2 tablespoons
- Zucchini: 500 g
- Onion: 0.5 head

Add salt and pepper, and after about a minute of cooking, add minced garlic and herbs. If the zucchini has absorbed all the oil, add a little more.
- Coarse salt: to taste
- Freshly ground black pepper: to taste
- Garlic: 1 clove
- Chopped tarragon leaves: 2 tablespoons
- Crushed basil leaves: 0.3 glass
- Grape seed oil: 2 tablespoons

Remove from heat, flatten the circles again, and place thin slices of cheese on top. Cover with a lid and cook on low heat until the cheese melts.
- Gruyere cheese: 60 g
