Cut the bottom off each pak choi head and slice thinly across. Rinse well under running water and dry.
- Mini Pak Choi Salad: 700 g

In a wok over high heat, heat the peanut oil, but not until it smokes. Add ginger, finely chopped green onion, and thinly sliced garlic. Stir-fry for about 15 seconds.
- Peanut butter: 2 tablespoons
- Grated ginger: 1 teaspoon
- Green onion with bulb: 2 pieces
- Garlic: 4 cloves

Add pak choi, salt, sugar, and white pepper. Stir-fry for a minute, then add 1 tablespoon of water, cover, and cook for 30 seconds until the pak choi wilts. Open the lid and stir-fry for a few more seconds. Cover again, reduce the heat, and cook for another 30 seconds. Serve immediately.
