Preheat the oven to 180 degrees.

In a bowl, mix the peeled and diced pumpkin with 1 tablespoon of olive oil. Add salt and pepper. Transfer to a baking sheet and bake in the oven for 30-40 minutes until soft.

- Olive oil: 2 tablespoons

- Freshly ground black pepper: to taste

Meanwhile, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a pan. Add thinly sliced onions and cook on low heat for 40-50 minutes until the onions start to caramelize. Add minced garlic and cook for a few more minutes. Remove from heat.

Melt the remaining butter in a pan and heat until light brown. Add the sage leaves and cook for another 2-3 minutes until the leaves are crispy. Add the pumpkin, onion, and cheese, and stir until the cheese starts to melt. Remove from heat and serve.
