Grilled Artichokes

Preheat the grill or barbecue.

In a large saucepan, mix water, olive oil, 5 thin slices of lemon, and thyme. Bring to a boil over high heat. Trim the stems and all old leaves from the artichokes and add them to the saucepan. Bring to a boil again, reduce the heat, and simmer until tender for about 10 minutes. Drain.

- Olive oil: 2 tablespoons
- Lemon: 1.5 piece
- Fresh thyme: 3 stems
- Artichokes: 8 pieces

Brush the artichokes with olive oil and place them on the grill. Grill until golden brown on all sides for about 3 minutes. Drizzle with lemon juice and sprinkle with salt.
