Kuban-style tomatoes are a bright and aromatic dish of Russian cuisine that reflects the color and generosity of Kuban. Its roots go back to the traditions of vegetable pickling widely practiced among Cossacks. Lightly salted tomatoes stuffed with a spicy mixture of garlic, pepper, carrots, and celery acquire a rich flavor with a slight spiciness. Additional herbs like dill and horseradish add fresh notes, while sugar and salt provide a balanced harmony of sweetness and saltiness. The dish is perfect as an independent appetizer or as an accompaniment to meat and fish dishes.

Prepare lightly salted tomatoes. For this, finely chop and mix bell pepper, garlic, hot pepper, carrot, and celery leaves. Cut each tomato 2/3 around and stuff with the mixture of chopped vegetables.
- Sweet pepper: 500 g
- Garlic: 4 cloves
- Red chili pepper: 2 pieces
- Carrot: 4 pieces
- Celery: 100 g
- Tomatoes: 3 kg

Then place the tomatoes in a pot. On top, add horseradish leaves, dill, and other aromatic herbs. Pour boiling water, with 2 tablespoons of salt and 1 tablespoon of sugar per 1 liter. After a day, the lightly salted tomatoes will be ready.
