Preheat the oven to 160 degrees. Place the ham in a dish and pour apple juice over it. Cover the ham with parchment and then wrap it with foil along with the dish. Bake the meat for 3 hours and 45 minutes until the internal temperature reaches 60-62 degrees. Remove the meat from the oven and increase the temperature to 190 degrees.
- Apple juice: 1 glass
- Smoked ham: 4.5 kg

Remove the foil and parchment and drain the liquid from the mold. Trim some excess fat from the ham and spread mustard on it. Sprinkle sugar on the mustard, pressing it slightly to create a thick layer. Then brush with honey. Bake for about 30 minutes until the meat caramelizes, constantly basting with juices.
