Preheat the oven to 200 degrees. Chop the onion into small pieces and transfer to a bowl. Drizzle with olive oil, sprinkle with chopped cumin, coarse salt, and pepper. Mix well. Spread in a single layer on a large baking sheet.
- White onion: 12 heads
- Shallots: 8 pieces
- Red onion: 12 heads
- Green onions: 6 pieces
- Sweet onion: 2 heads
- Yellow onion: 1 head
- Olive oil: 3 tablespoons
- Caraway leaves: 1 tablespoon
- Coarse salt: 1 teaspoon
- Ground black pepper: 0.5 teaspoon

Fry the onion until soft and golden for about 25-30 minutes.

On another baking sheet, place the broken baguette into small pieces and bake until golden brown for 7-8 minutes. Let it cool on the baking sheet.

Lay the onions in a single layer in a fireproof dish, cover, and place in the refrigerator.

Preheat the oven to 180 degrees again. Pour the broth over the onion and top with croutons. Sprinkle with cheese and bake for about 20 minutes. Sprinkle with sea salt and serve.
