Soak 6 bamboo sticks in cold water for 2 hours.

Cut the chicken into small cubes (2.5 cm). Trim the roots and ends of the green onion and cut into 2.5 cm pieces. Alternate 3 pieces of chicken and 2 pieces of onion on each skewer. Sprinkle with salt and white pepper.
