Kystyby with potatoes from dumpling dough

Kystyby is a traditional Tatar dish, a soft wheat flatbread filled with potatoes. Its origins date back to when Tatar nomads created simple yet hearty recipes. Kystyby is fried until golden and filled with mashed potatoes seasoned with salt and pepper. After cooking, it is brushed with butter for added flavor and softness. Kystyby is perfect as a standalone dish or as an accompaniment to soups and tea.

Peel the potatoes, boil them, mash into puree, add salt and pepper.
- Potato: 500 g
- Salt: to taste
- Ground black pepper: to taste

Divide the dough into pieces, roll into thin round flatbreads, and bake them in a dry hot pan until golden brown. Bake for literally 1-2 minutes on each side to prevent them from drying out.
- Dough for dumplings: 200 g

Place mashed potatoes on half of the hot flatbread and fold the flatbread in half to cover the filling with the other half.

Brush the flatbreads with butter on top and serve at the table.
