Fried Suluguni

In a New Year's feast, which is very long, the sequence of changing dishes is not so important, its dramaturgy develops according to cyclical laws. So these fried pieces of suluguni with an expressive sauce of honey and pepper with garlic can be served at the beginning, as well as in the middle and at the end of the feast, if, of course, you have the strength to put a frying pan on the stove.

Melt butter in a pan, add olive oil, and heat the mixture well. Butter tends to burn on fire, so adding olive oil is not just a matter of taste but also safety: vegetable oil prevents butter from burning quickly. Use refined vegetable oil, not fresh-pressed oil. To be completely safe, use clarified butter instead. Then you can fry a lot of cheese in a small amount of boiling fat.

- Olive oil: 30 ml

Slice suluguni into one centimeter thick pieces and fry in hot oil on one side, then flip and fry on the other. Serve immediately in the pan while the cheese is still hot.
