Clean the celery root, cut it into 4 parts, then slice it thinly, and then cut it into thin strips.
- Celery root: 200 g

Put mayonnaise on a plate, add salt, pepper, and mustard.
- Mayonnaise: 70 g
- Salt: to taste
- Freshly ground black pepper: to taste
- Mustard: 1 tablespoon

Chop 2–3 gherkins, 2–3 teaspoons of capers, and 2–3 anchovies.
- Gherkins: 3 pieces
- Capers: 3 teaspoons

Add olive oil and lemon juice.
- Olive oil: 3 tablespoons

Chop the cilantro (traditionally parsley should be used) and add it to the mixture.
