Place the prepared chicken in a pot, cover it with cold water just enough to submerge it, and cover the pot with a lid, then set it on high heat.
- Chicken fillet: 125 g

Once the water boils, remove the foam and continue cooking on low heat, adding parsley root and salt.

Remove the cooked chicken from the broth, salt it, cut it into pieces, and arrange it on a plate in the shape of a whole bird.
