Squeeze the lemon juice and pour half into a large bowl of water. Cut off the stems of the artichokes and remove the tough outer leaves. Trim the tips of the remaining leaves. Cut the artichokes lengthwise and remove the heart. Drizzle the artichokes with the juice of the remaining half lemon and place them in the lemon water.

Boil salted water in a large pot, add the artichokes, and bring to a boil again. Reduce the heat, cover, and cook for 25 minutes until they are tender. (Try gently pulling off a leaf - it should come off easily). Drain the water by turning the artichokes upside down and gently pressing them.

Heat sunflower oil in a pan, add diced ham, and cook, stirring, over medium heat for 8 minutes. Sprinkle with finely chopped parsley and serve immediately.
