Ham rolls with Russian salad and jelly are a refined dish that combines the tenderness of meat flavor with the refreshing texture of jelly. This recipe draws inspiration from Russian culinary tradition, where the classic 'Olivier' meets elegant presentation. The ham gently wraps around a creamy salad of potatoes, carrots, and mayonnaise, creating a harmony of textures. The gelatinous shell not only adds visual appeal but also highlights the freshness of the components. This snack masterpiece is perfect for festive tables, surprising guests with its originality. Served chilled, it is especially enjoyable on warm days. A garnish of crispy lettuce and juicy tomato adds freshness and balance, completing the culinary delight.

Prepare the salad: dice the peeled potatoes and carrots and boil them. Then drain all the water, dry the vegetables, and let them cool. Add mayonnaise and peas, mix well, cover with plastic wrap, and place in the refrigerator.
- Potato: 250 g
- Carrot: 4 pieces
- Canned green peas: 100 g
- Mayonnaise: 150 g
- Salt: to taste

Clean and boil two carrots in salted boiling water until soft. Then slice them thinly and set aside. Also, boil an egg.

Pour 600 ml of water into a bowl, sprinkle gelatin on top, and let it sit for 5 minutes until it swells. Then place the bowl in a pot of gently boiling water and heat until the gelatin mixture is smooth. Remove the bowl from the heat. Take a round pie dish with a diameter of 23 cm and a depth of 4 cm, and pour a thin layer of gelatin into it; place it in the fridge and wait for it to set. Then layer in slices of carrot and eggs.

At this time: take a slice of ham, place it on a plate, add one and a half tablespoons of salad inside, roll it up, and secure it with a skewer for canapés. Repeat the same operation with all the slices of ham and the remaining salad. Now place the rolls in a mold with gelatin - arrange them like the spokes of a wheel and ensure the skewers are pointing straight up. Carefully pour the remaining gelatin over the rolls and put the mold in the refrigerator for 3-4 hours to let the jelly set.
- York ham: 6 pieces

Before serving, remove all skewers. Run a knife along the inside edge of the mold to separate the jelly from the walls. If you're not confident you can remove the jelly carefully, briefly immerse the mold in a large bowl of hot water, ensuring it doesn't overflow. Then cover the mold with a large plate and quickly flip it over.
- Gelatin: 2 teaspoons
