Potato sausage is an ancient Russian dish born from the desire to use available ingredients to their fullest potential. It combines the rich aroma of crispy bacon, the tenderness of potato dough, and a hint of spice. The taste resembles cozy homemade cutlets but has a unique texture due to its fried and baked shell. This dish is perfect for festive gatherings as well as cozy family dinners. It is served with cracklings, adding a pleasant crunch and rich flavor. Potato sausage is great on its own but also pairs wonderfully with fresh vegetables, pickles, and sour cream sauce that highlights its delicate potato flavor.
