Clean everything and cut into large pieces: carrots and apples into 4 parts, turkey in as large pieces as possible.
- Turkey fillet: 600 g

Take two pots. One should fit into the other and be submerged at least halfway. In the smaller pot, combine all ingredients except salt. Pack tightly so the lid closes very snugly. Fill the larger pot with water about halfway and bring to a boil. Place the tightly closed smaller pot into the larger one to create a steam bath. The meat and vegetables will stew in their own juices. Leave this setup for 5-8 hours, adding new water every 40 minutes as it evaporates.
- Cardamom: 10 pieces
- Onion: 1 piece
- Celery root: 180 g
- White wine: 0.5 glass
- Bay leaf: 2 pieces
- Black peppercorns: to taste

Remove the turkey and apples from the pot. Shred the turkey with forks or hands — that's the essence of rillettes. Turn the apples into puree — with a spoon or potato masher. Add white wine. You can also strain the liquid from a small pot through cheesecloth or a fine sieve and add that too. Season with salt.
