Japanese pancake okonomiyaki

Okonomiyaki is a large cabbage pancake that the Japanese often make at home. This dish is sometimes called Japanese pizza because of its ease of preparation and the variety of possible fillings. Egg whites and cabbage are used as a base, and then you can add anything you like: ham, seafood, and vegetables. This is reflected in the name of the dish, which consists of two parts: "okonomi" - "what you like" or "what you want", and "yaki" - this is how fried dishes are called in Japanese . Traditionally, okonomiyaki is decorated with mayonnaise and okonomiyaki sauce and sprinkled with tuna shavings: from the streams of hot air coming from the okonomiyaki, it begins to move as if alive.

Prepare the necessary ingredients.

To prepare tempura batter, mix tempura flour with 40 milliliters of cold water until smooth.
- Tempura mix: 30 g
- Water: 240 ml

In a small saucepan, heat vegetable oil and pour in the tempura in small drops. Fry for one to two minutes, then remove the fried batter drops.
- Vegetable oil: 520 ml

Transfer them to paper towels to get rid of excess fat.

Dissolve dashi powder in 200 milliliters of water. In a large bowl, mix flour, salt, and sugar, pour in the dashi broth, add eggs, and knead the dough.
- Dashi powder: 1 teaspoon
- Water: 240 ml
- Wheat flour: 160 g
- Salt: 0.3 teaspoon
- Sugar: 0.3 teaspoon
- Chicken egg: 4 pieces

Add finely chopped cabbage, green onion, minced pickled ginger, and tenkasu balls from the first step to the dough. Mix well.
- White cabbage: 480 g
- Green onions: 40 g
- Pickled ginger: 10 g
- Tempura mix: 30 g

Heat the pan well, place a quarter of the prepared mixture on it, and shape the mixture into a round pancake about 2 cm thick.

Place pieces of pork on the pancake and fry on medium heat until the bottom is set.
- Pork belly: 160 g

Then carefully flip the okonomiyaki using wide spatulas and cover the pan with a lid. Fry for another 5-7 minutes.

Brush the ready okonomiyaki with okonomiyaki sauce, make a grid with Japanese mayonnaise. Sprinkle with bonito flakes on top.
