Spanish Potatoes Patatas Bravas

The classic Spanish snack is usually served in bars with a glass of wine or a shot of brandy. Therefore, it is important that the potato pieces are small - literally one bite.

Prepare the necessary ingredients.

Cut the potatoes into bite-sized pieces, throw them into boiling water, and cook for 5 minutes. Then drain the water and set the potatoes aside while the sauce is being prepared.
- Potato: 800 g

Fry diced onion in olive oil until transparent, adding a little salt.
- Onion: 1 head
- Salt: to taste
- Olive oil: 50 ml

Add minced garlic, paprika, cayenne pepper, and white pepper, and mix.
- Garlic: 1 clove
- Paprika: 1 teaspoon
- Cayenne pepper: 0.5 teaspoon
- Ground white pepper: 0.5 teaspoon

Add flour and stir for about 3 minutes.
- Wheat flour: 2 tablespoons

Then pour in the broth and cook, stirring for another 8-10 minutes.
- Chicken broth: 200 ml

Then remove from heat and blend the sauce with a blender.

Heat the vegetable oil.

Fry the potatoes until golden-brown. Transfer to paper towels to get rid of excess fat.

Patatas bravas can be served in different ways: drizzling the potatoes with sauce or placing the sauce next to the potatoes, adding mayonnaise or aioli.
