For the jelly, soak the gelatin in a bowl of warm water for 15 minutes.
- Gelatin in plates: 3 pieces

Squeeze juice from washed cranberries by hand, set aside, and place the remaining in a small saucepan, pour in a glass of hot water, add sugar, and let it boil for 5 minutes, lightly salt, and strain through a sieve.
- Cranberry: 100 g
- Sugar: 3 tablespoons
- Salt: to taste

Add gelatin and thyme, heat well while stirring. Then mix with juice and pour into a mold (later it needs to be cut into squares with a knife) or into small portion molds. Let cool and place in the refrigerator until set.
- Gelatin in plates: 3 pieces
- Thyme leaves: 25 g

Place the thoroughly washed tongue in a large pot, cover with water, put on the heat, and bring to a boil. Skim off the foam and reduce the heat to minimum.
- Beef tongue: 1 piece

Peel the onion and carrot, cut them in half, place them in a pot with the tongue, add bay leaf and salt with pepper. Let it cook for at least 2 hours.
- Onion: 1 head
- Carrot: 1 piece
- Bay leaf: 3 pieces
- Salt: to taste
- Black peppercorns: 10 pieces

When the tongue is boiled, remove it from the pot and place it under cold water for 5 minutes, then the skin will come off more easily.

Cut the cleaned tongue into slices.

Serve by placing a piece of jelly between 2 slices of tongue.
