Divide the onion into fibers, rinse thoroughly, and leave on a towel until completely dry.
- Young leeks: 1 piece

Once the onion is completely dried, cut it into thin rings.

After an hour or two, the onion is ready for further processing. Place it on parchment and send it to a preheated oven at 50 degrees for 10 minutes. Leave the lid slightly open.

Let the onion cool for 15 minutes, then pour it into the blender.
