Place the chilled egg whites in a deep bowl and beat with a mixer, gradually adding sugar until a stiff white mass forms.

Add one saffron thread to the resulting mixture. Mix well.

Add almond flour in small portions and gently mix with the whipped egg whites to prevent the mixture from collapsing.

Transfer the obtained mass to a pastry bag and form small circles about 3.5 cm in diameter on a baking sheet lined with parchment paper. I got 29 cookies.

Place the cookies in the oven on the middle rack and bake for 40 minutes at 140 degrees.
