Sverdlovsk puff pastry

8 servings

30 minutes

A recipe from childhood, in the 50s it was invented at the Sverdlovsk confectionery factory. Today there is no such city, but everyone who was born in the USSR treats the airy, buttery buns sprinkled with sugar streusel with tenderness . According to the Soviet GOST, Sverdlovsk puff pastry was prepared with margarine, but from rich dough with milk and butter, the plump buns turn out even tastier. From the book by Oksana Putan "Favorite Russian pies"

Cooking steps
  • 1

The essence and flavor of these buns lie in their formation. Roll out the prepared, twice-proofed dough into a rectangular sheet.

    Required ingredients:
    1. Yeast dough700 g
  • 2

Spread half of the pastry crumbs by hand over the surface of the dough.

    Required ingredients:
    1. Sand crumbs300 g
  • 3

Fold the edges on both sides and shape the dough so that the crumbs are inside and the edges overlap each other.

  • 4

Pressing hard on the rolling pin, literally pushing the crumbs into the dough, first roll it out along the length of the dough. Then, as much as possible, roll the dough out in width.

  • 5

Sprinkle with crumbs again (half of the remaining), fold the dough in the same way (lengthwise, with crumbs inside).

    Required ingredients:
    1. Sand crumbs300 g
  • 6

Cut the resulting roll in half. Roll each half slightly into a strip alternately.

  • 7

Cut each half of the dough into 4 pieces.

  • 8

And roll each part into a conditional square.

  • 9

Fold the corners of the template into an envelope shape - bend the opposite corners towards each other...

  • 10

...and lay it overlapping by about 2 cm.

  • 11

Transfer the resulting 'envelopes' to a bowl with crumbs, folded side down. Press the bun slightly into the crumbs to make them stick to the dough.

    Required ingredients:
    1. Sand crumbs300 g
  • 12

Then transfer the loaf to a baking sheet lined with parchment paper, turning it crumb side up.

    Required ingredients:
    1. Sand crumbs300 g
  • 13

Form the remaining buns in the same way. Allow the buns to rise for 25-30 minutes. During this time, preheat the oven to 220 degrees.

  • 14

Place the baking tray in the oven and bake the rolls for 10-15 minutes. The cooled rolls can be frozen by wrapping each one in plastic wrap.
