Sift the flour.
- Wheat flour: 400 g

In a saucepan, mix water and milk and bring to a boil.
- Water: 300 ml
- Milk: 900 ml

Mix in the flour, actively kneading the dough with a spatula. The dough is ready when it stops sticking to the sides of the saucepan.

Remove from the stove and let cool.

Add the eggs and knead well again. The dough should not be hard, but not too liquid either.

Put the dough in a pastry bag.

Heat the oil in a pot.
- Vegetable oil: 500 ml

Squeeze the dough from the bag directly into the pot with hot oil, either in stick form or shaped like a crescent. Fry until golden brown.

Remove the churros with a slotted spoon and place them on paper towels to drain excess oil, then roll them in sugar.
- Sugar: to taste

Boil the milk with pepper and cinnamon.

- Cinnamon sticks: 1 piece

Add broken chocolate pieces and stir until it melts.
- Dark chocolate: 200 g

Reduce the heat to minimum and gently whisk in the yolks.
- Egg yolk: 4 pieces

Pour the chocolate into cups and serve with churros.
