Cherry casserole with semolina

Cherry semolina casserole is a delicate and aromatic dish from Ukrainian cuisine that combines the airy texture of cottage cheese, the sweetness of semolina, and the refreshing taste of juicy cherries. Historically, such casseroles were made at home as a simple and hearty treat for the whole family. Semolina gives the casserole softness, while cherries add a tangy acidity, making the flavor balanced and refined. This casserole is perfect for breakfast or a light dessert, especially when paired with a cup of fragrant tea or fresh milk. Its convenient portion sizes make it an excellent treat for cozy home evenings or festive gatherings.

1
Pour semolina with warm milk, mix and let it steep (swell) for 15-20 minutes.
- Semolina: 3 tablespoons
- Milk: 200 ml
2
Beat the eggs with sugar using a mixer or blender.
- Chicken egg: 4 pieces
- Sugar: 3 tablespoons
3
Add cottage cheese, vanillin, and baking soda. Whisk.
- Cottage cheese: 500 g
- Vanillin: to taste
- Soda: 0.3 teaspoon
4
Add the swollen semolina. Whisk.
- Semolina: 3 tablespoons
5
Add berries to the resulting mixture and place it in a mold (I use silicone muffin molds, so everything is divided into portions; if you use a non-silicone mold, it needs to be greased with butter).
- Cherry: 200 g
6
Place the dish in a preheated oven at 180 degrees. Bake for 30-40 minutes. Do not open the oven for the first 30 minutes to prevent the casserole from 'falling'.
