Diet boiled condensed milk

Dietary boiled condensed milk is an elegant interpretation of the classic French treat with a focus on healthy eating. Unlike the traditional version, it uses skim milk and a natural sugar substitute – stevia extract, making the taste gentle and refined without excessive sweetness. Preparation starts with roasting dry milk for caramel notes, then the mixture is finely ground and enriched with starch for thickness. During microwave processing, the mass acquires a pleasant velvety texture, and after overnight cooling, its consistency and taste closely resemble store-bought condensed milk. An ideal option for dietary nutrition – as a standalone dessert or an addition to morning toast, fruits, and pastries.

Roast the dry milk in a dry pan until golden (it will clump and form lumps, break them up and mix well for even roasting, don't overdo it, or it will taste burnt).
- Skim milk powder: 4 tablespoons

Grind the resulting mass thoroughly into flour using a coffee grinder to ensure no lumps remain, then additionally sift it.

Add starch, stevia, pour in milk, mix well, and blend thoroughly.
- Cornstarch: 0.5 tablespoon
- Stevia extract: to taste
- Milk: 150 ml

Place in the microwave (I have a power of 850 kW) for about 3 minutes, taking it out every minute to stir well until the mixture thickens (watch the process closely and stop to stir more often than once a minute if necessary to prevent the mixture from overflowing).

Leave it in the fridge overnight, and then, when cold, its taste will closely resemble store-bought condensed milk.
